Irresistible jam-filled baked muffin that's dangerously addicting!
Ingredients:
  • 300g (2 cups) self-raising flour
  • 141.90 gm caster sugar, plus 141.90 gm extra to coat
  • 80ml (1/3 cup) vegetable oil
  • 1 large egg
  • 175ml buttermilk
  • 4.40 gm vanilla extract
  • 19.80 gm good-quality strawberry jam
  • 100g unsalted butter
  • 2.50 gm ground cinnamon
Instructions:
  • Preheat your oven to a toasty 180°C and generously grease a 6-hole muffin pan.
  • Sift flour into a medium bowl, then mix in salt and caster sugar. In a jug, combine vegetable oil, egg, buttermilk, and vanilla extract. Stir into dry mixture until just combined. Spoon batter into muffin holes, create indentations, fill with strawberry jam, cover with remaining batter, and bake for 20 minutes. Let cool before serving.
  • While the muffins cool, melt the butter. In a large bowl, mix the extra sugar and cinnamon. Brush each muffin with melted butter, then coat in the cinnamon sugar. Serve warm.
