Delicious baked treats that are easy to make - simply bake in a tray and enjoy!
Ingredients:
  • 300.00 gm self-raising flour
  • 125.00 ml plain flour
  • 161.25 gm caster sugar
  • 115.00 gm vegetable oil
  • 2 eggs, lightly beaten
  • 260.00 gm buttermilk
  • 4.40 gm vanilla extract
  • 108.90 gm strawberry jam
  • 40.00 gm caster sugar, extra
  • 2.50 gm ground cinnamon
  • 40g butter, melted
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 20cm x 30cm lamington pan that is 3cm deep and line the base and sides with baking paper, making sure to extend the paper 5cm above two long sides of the pan.
  • In a large bowl, mix together the flours and caster sugar. Create a well in the center. In a separate jug, combine oil, egg, buttermilk, and vanilla. Pour this mixture into the well. Gently stir with a wooden spoon until just combined, making sure not to over mix.
  • In a microwave-safe bowl, place half of the jam and add 2 teaspoons of cold water. Microwave on HIGH for 20 seconds until warm. In a separate small bowl, combine additional sugar and cinnamon.
  • Pour half of the cake mixture into the prepared pan. Warm the jam mixture and drizzle it over the cake. Sprinkle half of the cinnamon sugar on top. Spoon small dollops of the remaining cake mixture over the jam and spread it out evenly. Add small teaspoons of the remaining jam in rows, spaced about 4cm apart, over the cake mixture.
  • Bake for 30 to 35 minutes until a skewer comes out clean, then brush the hot cake with melted butter and sprinkle with the remaining cinnamon sugar. Let it stand for 10 minutes before serving warm with whipped cream. Enjoy!
