Deep fried mini jam sandwiches with a crispy golden coating. Customize with jam or butter and cinnamon sugar. Quick to make with pantry staples. Kids adore them!
Ingredients:
  • 3 eggs, beaten
  • 0.5 cup milk
  • 0.5 teaspoon vanilla extract
  • 0.25 cup sugar
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • canola oil
  • 10 slices white bread
  • strawberry (or any flavor) jam
  • confectioners' sugar
Instructions:
  • Combine eggs, milk, vanilla, and sugar in a bowl, stirring until sugar is dissolved. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the flour mixture to the egg mixture, stirring until smooth. Set aside.
  • Preheat the deep-fryer to 375 degrees F (190 degrees C).
  • Prepare decadent bite-sized sandwiches by spreading jam evenly between slices of bread. Trim off the crusts and cut each sandwich into quarters, delicately wiping away any excess jam. Dip each quarter into batter until fully coated.
  • Fry sandwiches in batches until puffy and golden brown, drain on paper towel-lined rack, sprinkle with powdered sugar, and serve warm.
