Irresistible jam drops recipe worth doubling up on!
Ingredients:
  • 125g salted butter, softened
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla essence
  • 1 egg
  • 190g (1 1/4 cups) self-raising flour
  • Plain flour, to dust
  • 115g (1/3 cup) strawberry or raspberry jam
Instructions:
  • Preheat the oven to 180°C and line 2 baking trays with non-stick paper. Using an electric beater, cream together butter, sugar, and vanilla until pale and creamy. Mix in the egg until well combined. Fold in the sifted flour until fully incorporated.
  • Roll teaspoonfuls of the mixture into balls using floured hands. Space them 5cm apart on the trays. Press a lightly floured finger into the center of each ball to make an indentation. Fill each biscuit with 1/2 teaspoon of jam.
  • Bake the biscuits in a preheated oven for 15 minutes, rotating the trays halfway through, until they are cooked through and golden. Then, cool the biscuits on the trays for 30 minutes before serving.
