Valentine's Day sweetheart jam drop cookies baked with love.
Ingredients:
  • 125g butter, softened
  • 2.20 gm vanilla essence
  • 1 egg yolk
  • 312.50 ml plain flour, sifted
  • 132.00 gm raspberry jam
Instructions:
  • Preheat your oven to 180°C, and grease 2 baking trays before lining them with baking paper.
  • Cream the butter, sugar, and vanilla together using an electric mixer until light and fluffy. Mix in the egg yolk, then add the flour and stir until fully combined.
  • Roll 2 tablespoons of the mixture into a ball, repeating until you have 10 balls. Place the balls 10cm apart on trays. Flatten each ball to form a 7cm round with the palm of your hand, smoothing the edges to remove any cracks.
  • Press the heart-shaped cutter into the center of each round, making sure not to cut all the way through. Use a small knife to carefully scoop out the dough to create a heart-shaped indentation. Smooth out the indentation and fill each heart with 2 teaspoons of jam, spreading it to the edges.
  • Bake until light golden, 15 to 20 minutes. Allow to cool on trays before serving.
