Delicious jam drop cookies, perfect for tea time.
Ingredients:
  • 125g butter
  • 75g (1/3 cup) caster sugar
  • 4.40 gm vanilla essence
  • 185g (1 1/4 cups) plain flour
  • 4.00 gm baking powder
  • 10.40 gm milk
  • 160g (1/2 cup) jam of your choice (like strawberry, raspberry, apricot, plum or blackberry)
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray with non-stick baking paper.
  • In a medium mixing bowl, use electric beaters to cream together the butter, caster sugar, and vanilla essence until pale and creamy. Sift the plain flour and baking powder together, then stir into the butter mixture along with the milk using a wooden spoon until a soft dough forms.
  • Using lightly floured hands, roll small balls of biscuit mixture and place them 5cm apart on the prepared baking tray. Flatten each ball to 3.5cm in diameter using a spatula, then create a 2cm-wide indent in the center of each using your finger or the end of a wooden spoon. Generously fill each indent with jam.
  • Bake in a preheated oven until lightly golden and cooked through, about 18-20 minutes. Allow to cool on the baking tray for 2-3 minutes, then transfer to a wire rack. Repeat with the rest of the biscuit dough and jam. Store in an airtight container for up to 1 week.
