Vintage recipe with age-enhanced sweetness.
Ingredients:
  • 125g butter, softened
  • 100g caster sugar
  • 150g self-raising flour
  • 35g custard powder
  • 90g raspberry
Instructions:
  • Begin by preheating your oven to 180°C and lining two oven trays with baking paper. In a medium bowl, use an electric mixer to cream together the butter and sugar until pale and creamy. Add the egg and mix until combined. Finally, add the flour and custard powder, stirring with a wooden spoon until just combined.
  • Roll 1 1/2 teaspoons of the mixture into small balls using lightly floured hands. Place on lined trays with enough space for spreading. Press the center of each ball with a floured finger or the end of a wooden spoon. Fill each indentation with 1/2 teaspoon of jam.
  • Place in a preheated oven, making sure to swap the trays halfway through, and bake for 15 minutes or until lightly golden and fully cooked. Once done, take out of the oven and allow to cool completely on the trays.
