Indulge in exquisite Japanese-style golden shrimp with a luscious, velvety egg yolk sauce. Prep the magical sauce ahead of time for a dreamy dining experience.
Ingredients:
  • 2 egg yolks
  • 1.25 cups canola oil
  • 1 tablespoon seasoned rice vinegar
  • 0.25 teaspoon salt
  • 0.25 teaspoon garlic powder, or more to taste
  • 3 saffron threads, crushed, or to taste
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon butter, or to taste
  • 1 splash white cooking wine
Instructions:
  • Whisk egg yolks until smooth. Gradually stream in the oil, a few drops at a time, while whisking constantly until the mixture thickens like custard. Gently incorporate rice vinegar, salt, garlic powder, and saffron until fully blended. Cover your glorious sauce and chill for 8 hours to overnight for the flavors to harmonize.
  • Lay shrimp flat on surface. Carefully slice horizontally through the middle, opening the two sides like a book. Pat dry with paper towels.
  • In a large skillet over medium-low heat, melt butter. Arrange shrimp in a circle with their tails touching. Spoon 1 heaping teaspoon of golden sauce over each shrimp. Pour in white wine, cover with a lid, and steam until the sauce becomes fluffy, about 5 to 7 minutes. Carefully transfer the shrimp to serving plates using a slotted spatula.
