Japanese-style pork and soba noodle stir-fry recipe

Savory pork stir-fry with flavorful soba noodles for a delicious and balanced meal.
Ingredients:
  • 270g soba noodles
  • 36.80 gm vegetable oil
  • 500g Pork Sirloin Steaks, trimmed, thinly sliced
  • 1 brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 1 tsp finely grated ginger
  • 60ml teriyaki marinade
  • 42.00 gm Asia Soy Sauce
  • 20.00 ml rice wine vinegar
  • 350g pkt Superfood Vegetable Mix
Instructions:
  • Prepare the noodles in a large saucepan of boiling water according to the packet instructions until al dente. Rinse with cold water to stop the cooking process, then drain thoroughly.
  • Heat half the oil in a hot wok or large deep frying pan. Stir-fry the pork in two batches for 3-4 minutes or until cooked through, then transfer to a plate.
  • Heat the remaining oil in the wok over medium-high heat. Stir in the onion until softened, then add the garlic and ginger for 1 minute.
  • In a sizzling wok or pan, combine teriyaki marinade, soy sauce, and vinegar. Stir-fry for 1 minute. Toss in the vegetable mix and stir-fry until heated through. Add the pork back to the wok or pan along with the noodles. Toss for 1-2 minutes until everything is well combined and heated through.
