Jasmine tea-infused butter creates a fragrant and delightful loaf for tea enthusiasts.
Ingredients:
  • 1.5 sticks unsalted butter
  • 2 tablespoons black jasmine tea leaves, lightly crushed
  • 2 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 0.75 teaspoon kosher salt
  • 0.5 cup sour cream
  • 0.25 cup buttermilk
  • 0.75 cup white sugar
  • 2 tablespoons white sugar
  • 3 large eggs, at room temperature
  • 0.25 teaspoon almond extract
  • 0.25 cup sliced almonds
Instructions:
  • In a saucepan, gently melt the butter over low heat. Add jasmine tea and simmer for 5 minutes. Remove from heat and steep for an additional 5 minutes. Strain the mixture into a large bowl, discarding any solids. Allow the fragrant butter to cool to room temperature for 20 to 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9x5-inch loaf pan with parchment paper, leaving an overhang on two sides.
  • In a small bowl, whisk together flour, baking powder, and salt. In another small bowl, whisk together sour cream and buttermilk.
  • Incorporate 3/4 cup plus 2 tablespoons of sugar into the butter using an electric mixer until the mixture is light and fluffy, which should take about 3 to 4 minutes. Gradually add eggs one at a time, ensuring each addition is well incorporated. Remember to scrape down the sides of the bowl before stirring in the almond extract.
  • Gradually mix in the flour mixture, alternating with the sour cream mixture. Stir until just combined. Pour the batter into the prepared pan and top with sliced almonds.
  • Bake in the preheated oven for about 50 minutes until golden brown and a toothpick inserted into the center comes out clean. If the loaf starts to brown too quickly, tent it with foil.
  • Place the pan on a wire rack and allow the cake to cool for 15 minutes. Carefully remove the loaf by lifting it with the parchment paper overhang. Transfer the loaf to the rack and cool it completely before cutting into slices.
