Impress your holiday guests with decadent toffee cookies.
Ingredients:
  • 3 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 tablespoons instant coffee granules or crystals
  • 3 teaspoons vanilla
  • 2 eggs
  • 4 bars (1.4 oz each) chocolate-covered English toffee candy, finely chopped
Instructions:
  • Start by combining flour, baking soda, and salt in a medium bowl. In a separate large bowl, use an electric mixer to beat butter, granulated sugar, brown sugar, coffee granules, and vanilla until fluffy. Add eggs one at a time, mixing well after each addition. Gradually blend in the flour mixture on low speed. Finally, stir in the chopped candy.
  • Form the dough into 4 (6-inch) logs, then tightly wrap them in plastic wrap. Chill in the refrigerator for at least 8 hours or up to 3 days.
  • Preheat oven to 350°F and line cookie sheets with parchment paper. Slice dough into 1/4-inch pieces. Arrange slices 1 inch apart on the prepared sheets.
  • Bake for 8 to 12 minutes until lightly browned, then transfer to cooling racks.
