Indulgent molten chocolate cakes - a perfect blend of coffee and bittersweet chocolate for a luxurious dessert.
Ingredients:
  • 1 tablespoon butter
  • 1 cup butter, cut into pieces
  • 8 oz bittersweet chocolate chips
  • 4 egg yolks
  • 4 whole eggs
  • 2 cups powdered sugar
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1 teaspoon instant espresso powder or coffee granules or crystals
  • Dash salt
  • Additional powdered sugar, if desired
Instructions:
  • Preheat oven to 425°F and generously coat 6 (6-oz) ramekins with 1 tablespoon of butter.
  • In a medium microwave-safe bowl, microwave 1 cup of butter and chocolate chips uncovered on High for 2 minutes, or until the chips are softened and the mixture can be stirred smooth.
  • In a medium mixing bowl, use an electric mixer to beat the egg yolks and eggs on medium speed for 1 minute. Then, on low speed, gradually mix in the chocolate mixture until well blended.
  • Combine 2 cups of powdered sugar, flour, espresso powder, and salt in a small bowl. Mix into the chocolate mixture until fully combined. Divide batter evenly among baking dishes and place them in a 15x10x1-inch pan.
  • Bake until a thermometer reads 165°F when inserted into the center, around 16 minutes. Allow to cool for 10 minutes, then run a knife around the edges to loosen. Invert a heat-proof dessert plate over each baking dish, flip it over, and remove the dish. Dust the cakes with powdered sugar before serving.
