Indulge in oversized coffee cookies for ultimate java bliss.
Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon instant coffee granules or instant espresso coffee (dry)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 bag (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
  • 1/2 teaspoon instant coffee granules or instant espresso coffee (dry)
  • 1 tablespoon water
  • 1/2 cup powdered sugar
Instructions:
  • Preheat oven to 350°F. Cream together granulated sugar, brown sugar, butter, and egg until smooth. Mix in flour, 1 tablespoon coffee granules, baking soda, and salt. Fold in pecans and chocolate chunks.
  • Scoop dough using a 1/4 cup measuring cup onto a large ungreased cookie sheet, spacing them 2 inches apart.
  • Bake for 12 to 15 minutes until golden brown with set edges. Allow to cool for 4 minutes, then transfer from cookie sheet to wire rack. Cool completely, approximately 30 minutes.
  • In a small bowl, mix 1/2 teaspoon coffee granules with water until dissolved. Stir in powdered sugar until the mixture is smooth and thin enough to drizzle. Drizzle the cooled cookies with the Coffee Drizzle.
