Traditional Mexican coffee sweetened with piloncillo, akin to dark brown sugar, and infused with a comforting cinnamon kick.
Ingredients:
  • 4 cups water
  • 1/3 cup piloncillo, grated or to taste
  • 1 stick Mexican cinnamon
  • 1/4 cup ground coffee
Instructions:
  • In a pot, combine water, piloncillo, and cinnamon. Bring to a boil, then simmer for 8 minutes on low heat.
  • After taking the pot off the heat, infuse with coffee and stir thoroughly. Cover and let it steep for 5 minutes. Strain twice through a fine mesh strainer until completely smooth.
