Zesty vinaigrette coats fresh zucchini, celery, and onion for a vibrant potluck salad.
Ingredients:
  • 1.5 cups thinly sliced zucchini
  • 0.5 cup thinly sliced celery
  • 0.25 red onion, thinly sliced
  • 0.25 green bell pepper, thinly sliced
  • 6 tablespoons white sugar, or to taste
  • 0.25 cup rice vinegar
  • 2 tablespoons water
  • 3 tablespoons vegetable oil
  • 1 teaspoon vegetable oil
  • 1 tablespoon wine vinegar
  • 0.5 teaspoon dried basil
  • 0.125 teaspoon ground black pepper
Instructions:
  • Combine the zucchini, celery, red onion, and bell pepper in a bowl.
  • In a separate bowl, combine sugar, rice vinegar, water, vegetable oil, wine vinegar, basil, salt, and black pepper; whisk until well blended. Drizzle the dressing over the zucchini mixture and toss to coat. Chill in the refrigerator for 1 to 2 hours before serving.
