Elevate your steak with a luxurious French red wine and mushroom sauce.
Ingredients:
  • 0.5 cup butter
  • 1 small onion, sliced
  • 0.25 cup sliced carrots
  • 0.25 cup sliced celery
  • 25 peppercorns
  • 16 whole cloves
  • 3 tablespoons flour
  • 1 cup beef broth
  • 0.25 cup water, as needed
  • 2 tablespoons chopped fresh parsley, divided
  • salt and ground black pepper to taste
  • 0.33333334326744 cup red wine
  • 1 tablespoon olive oil, or to taste
  • 0.75 cup sliced mushrooms
Instructions:
  • In a large skillet over medium-high heat, melt butter until it sizzles. Add in onion, carrots, celery, peppercorns, and cloves. Saute until onions are beautifully caramelized, for about 7 to 10 minutes.
  • Combine flour with the onion mixture, stirring continuously until the flour is fully moistened, for about 1 to 2 minutes. Gradually pour in beef broth while stirring, allowing the mixture to thicken into a gravy over 5 to 10 minutes. Adjust the gravy consistency by adding water as necessary to prevent it from thickening too much.
  • Add 1 tablespoon of parsley and cook in the gravy, stirring occasionally, until the parsley flavors the gravy, for 5 to 10 minutes. Strain through a fine-mesh strainer into a clean saucepan and discard vegetables.
  • Gently warm the saucepan over low heat. Season the sauce with salt, pepper, and the majority of the parsley. Stir in the red wine.
  • In a skillet over medium-high heat, saute mushrooms in olive oil until fully tender, about 5 minutes. Mix sauteed mushrooms into the sauce and then spoon over steaks, garnishing with the reserved parsley.
