Sweet and aromatic vanilla-spiced baked carrots make a beautiful Easter side dish.
Ingredients:
  • cooking spray
  • 1 pound carrots, sliced
  • 0.25 cup butter, melted
  • 3 eggs, beaten
  • 1 pinch ground allspice, or to taste
  • 1 pinch ground nutmeg, or to taste
  • 1 pinch ground ginger, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat a casserole dish with cooking spray.
  • 1. Set up a steamer in a saucepan with water, just below the steamer. Bring water to a boil. Steam carrots until tender, about 10 to 15 minutes. Transfer carrots to a large bowl and mash. Mix in melted butter, eggs, sugar, vanilla extract, allspice, nutmeg, ginger, salt, and black pepper. Spoon mixture into a casserole dish.
  • Bake in the oven until perfectly cooked, around 40 minutes.
