Make nutmeg yeast dough, fill with jam, fry, and enjoy plain, sugared, or frosted doughnuts.
Ingredients:
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 0.33333334326744 cup water
  • 3 tablespoons margarine, melted
  • 4.5 cups bread flour
  • 1.5 teaspoons ground nutmeg
  • 1 tablespoon active dry yeast
  • 0.75 cup any flavor fruit jam
  • 2 quarts vegetable oil for frying
Instructions:
  • Place the milk, water, beaten egg, melted butter, sugar, bread flour, salt, nutmeg, and yeast in the bread machine pan following the manufacturer's specified order. Select the sweet dough cycle on the machine (refer to Editor's Note for using a stand mixer).
  • After the dough cycle finishes, transfer the dough to a floured surface and allow it to rest for 10 minutes.
  • Flatten the dough to 1/4-inch thickness and use a floured cookie cutter to cut into 2 1/2-inch rounds.
  • Fill half of the rounds with 1/2 teaspoon jam or jelly. Moisten edges with cold water and seal by placing the remaining rounds on top, pinching the edges firmly. Arrange the sealed doughnuts on a greased baking sheet. Allow them to rise until doubled in size in a warm place, which should take about 45 minutes.
  • Preheat the oil in a deep fryer to 375 degrees F (175 degrees C. Fry a single layer of doughnuts at a time. Turn the doughnuts as they float to the top until they are golden brown, which should take around 2 to 3 minutes. Carefully take out the doughnuts from the oil to avoid breaking them. Place them on paper towels to drain and sprinkle with sugar, if desired.
