Jerk Chicken with Sweet Potatoes Sheet-Pan Dinner

Transport your tastebuds to Jamaica with a simple and delicious jerk chicken sheet-pan meal for any night of the week.
Ingredients:
  • 1/4 cup olive oil
  • 1 tablespoon finely chopped peeled gingerroot
  • 1 tablespoon jerk seasoning (dry)
  • 1 teaspoon soy sauce
  • 3/4 teaspoon salt
  • 4 boneless skinless chicken breasts (1 3/4 lb)
  • 3 medium sweet potatoes, peeled, cut into 1-inch pieces (about 4 cups)
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
Instructions:
  • Preheat oven to 425°F and lightly coat a large, rimmed sheet pan with cooking spray.
  • Combine oil, gingerroot, jerk seasoning, soy sauce, and salt in a large bowl. Transfer 2 tablespoons of the mixture to a medium bowl. Marinate chicken in the medium bowl, then cover and refrigerate. Toss sweet potatoes in the remaining mixture in the large bowl. Spread the potato mixture onto a pan and roast for 15 minutes.
  • Place the chicken in the pan alongside the potatoes and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F and the potatoes are tender. Sprinkle cilantro on top before serving with lime wedges.
