Spicy Jamaican cabbage slaw with sweet vinegar dressing, perfect side for jerk chicken.
Ingredients:
  • 1 head cabbage
  • 2 tablespoons olive oil, or as needed
  • 1 small onion, thinly sliced
  • 0.5 chopped green bell pepper
  • 1 green onion, sliced
  • 1 whole Scotch bonnet chile pepper
  • 2 sprigs fresh thyme
  • 1 teaspoon salt
  • 1 cup shredded carrots
  • 0.25 cup white vinegar
  • 2 tablespoons white sugar
Instructions:
  • Prepare the cabbage by removing the tough outer leaves, coring the head, and shredding it; then set aside.
  • In a large skillet over medium-high heat, sauté onion, bell pepper, and green onion in olive oil until softened, about 5 minutes. Stir in Scotch bonnet pepper, thyme, and salt.
  • Combine cabbage and carrots with the onion mixture, ensuring they are well mixed. Cover the skillet and lower the heat to medium-low. Cook for about 10 minutes, stirring occasionally, until the cabbage begins to soften.
  • Add the vinegar and sugar into the mixture. Let it cook uncovered, stirring occasionally, until the cabbage is tender, approximately 3 minutes. Remove the Scotch bonnet pepper and thyme before serving.
