Succulent oven-baked Jamaican jerk seasoned rib tips, a tasty family favorite.
Ingredients:
  • 4 ounces light rum
  • 3 tablespoons fresh lime juice
  • 2 tablespoons brown sugar
  • 1 tablespoon coarsely ground black pepper
  • 2.5 teaspoons sea salt
  • 1.5 teaspoons ground allspice
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons dried crushed thyme
  • 0.75 teaspoon cayenne pepper
  • 0.75 teaspoon ground cloves
  • 6 pounds rib tips, cleaned and cut up
Instructions:
  • Preheat your oven to 300 degrees F (150 degrees C) to create the perfect cooking environment.
  • In a small bowl, combine the rum, lime juice, and brown sugar. Set aside. In another small bowl, mix together the black pepper, sea salt, allspice, cinnamon, thyme, cayenne pepper, and cloves.
  • Place the rib tips in a resealable plastic bag and add half of the spice mixture. Seal the bag and shake well to coat evenly. Add the remaining spice mixture, seal the bag again, and shake to coat all pieces thoroughly.
  • Take the rib tips out of the bag and place them on a baking sheet. Keep the lime juice marinade aside for basting.
  • Roast in the oven until meat starts to pull away from the bone, approximately 1 hour and 20 minutes, while brushing with zesty lime juice marinade every 20 minutes.
