Ingredients:
  • 2 serrano peppers, seeded and minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons rice vinegar
  • 1 bunch fresh cilantro, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 cup olive oil
  • 0.5 fresh pineapple - peeled, cored, and cut into chunks
  • 1 jicama, peeled and julienned
  • 3 cups mixed baby greens
  • 1 avocado - peeled, pitted and diced
Instructions:
  • In a large bowl, combine serrano pepper, lime juice, rice vinegar, cilantro, salt, and pepper. Gradually whisk in the olive oil. Mix in the pineapple and jicama, ensuring everything is coated. Let it sit for 30 minutes to 1 hour before serving.
  • In a large salad bowl, combine spring mix, avocado, marinated pineapple, and jicama. Drizzle the remaining vinaigrette over the salad and serve immediately.
