Revamped brownie recipe for Passover: Delicious flourless and leavening-free brownies that taste just as amazing as the original version!
Ingredients:
  • 0.5 cup butter
  • 2 (1 ounce) squares unsweetened chocolate, chopped
  • 2 eggs
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons matzo meal
  • 0.5 cup potato starch
  • 0.5 cup chopped walnuts
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8x8 inch square pan.
  • In a small saucepan over medium heat, melt the butter, then remove from heat and stir in the unsweetened chocolate. Set aside.
  • In a medium bowl, use an electric mixer to beat eggs and sugar for about 5 minutes. Reduce speed, add chocolate, butter, and vanilla, and mix well. In a separate bowl, combine matzo meal, potato starch, and salt. Stir mixture into the chocolate until fully blended. If desired, add walnuts or chocolate chips. Transfer batter to prepared pan and spread evenly.
  • Bake the brownies in the preheated oven for 25 minutes until they have a dry top and start pulling away from the sides.
