Farmers Mark and Joanie's favorite veggie-filled egg dish – customizable to your taste!
Ingredients:
  • 1 tablespoon butter or margarine
  • 1 cup sliced mushrooms
  • 0.5 cup chopped green and/or red peppers
  • 0.33333334326744 cup chopped onion
  • 12 eggs
Instructions:
  • In a medium frying pan over medium heat, melt butter and saute mushrooms, peppers, and onion until tender.
  • Combine eggs and water, then pour over cooking vegetables. Cover and cook on medium heat, gently redistributing the mixture to ensure even cooking.
  • Finish cooking the frittata by covering it with a lid for a few minutes, flipping it in the pan, or placing it under the broiler until the top is set.
  • Flip the frittata onto a plate, then slide it back into the pan, cooking until the bottom is done.
  • Place the ovenproof frying pan under a preheated broiler for about a minute or two until the top is cooked and slightly puffed. To ovenproof the handle, wrap it with a double thickness of aluminum foil.
  • Slice into wedges and elegantly present.
