Try a speedy veggie frittata for a satisfying breakfast in just 20 minutes!
Ingredients:
  • 4 whole eggs
  • 6 egg whites
  • 3/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • Dash pepper
  • 2 teaspoons canola or olive oil
  • 2 cups frozen Italian-blend vegetables, thawed (from 1-lb bag)
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Combine whole eggs, egg whites, Italian seasoning, salt, and pepper in a medium bowl and mix until fully combined.
  • Heat oil in a large skillet over medium heat. Add the egg mixture and vegetables. Cook on medium-low heat for 3 to 4 minutes, gently lifting and tilting the skillet to let uncooked parts flow underneath.
  • Continue cooking for 7 to 8 minutes until the eggs are almost set but the top is slightly moist. Then, sprinkle with cheese, cover, and cook for an additional 1 to 2 minutes until the cheese is melted.
