Quick and tasty vegetarian frittata, great hot or cold for lunches.
Ingredients:
  • 9.20 gm olive oil
  • 1 bunch asparagus, halved
  • 1/2 red capsicum, thinly sliced
  • 4 eggs, lightly beaten
  • 80g corn cob
  • 20.00 ml chopped fresh flat-leaf parsley
Instructions:
  • 1. In a small non-stick frying pan, heat oil over medium-high heat. Add asparagus and cook, stirring occasionally, for 3 minutes until slightly tender. Transfer to a plate. Add capsicum to the pan and cook, stirring occasionally, for 3 minutes until starting to soften. Return asparagus to the pan along with eggs, corn, and parsley. Cook for 5 minutes until the base is cooked through.
  • Preheat the grill on high while you grill the frittata for 3–5 minutes until set. Then, serve.
