Turn leftover frittata into a quick veggie salad with zesty mustard dressing for a delicious and easy vegetarian lunch in 10 minutes!
Ingredients:
  • 50g sugar snap peas, trimmed, halved lengthways
  • 75g cherry tomatoes, halved
  • 30g mixed salad leaves
  • 1 serve frittata (see recipe notes), cut into 3cm pieces
  • 2 tsp white balsamic condiment
  • 1 ⁄5.90 gm Dijon mustard
Instructions:
  • Steam the sugar snap peas over boiling water for 2 minutes until vibrant green and just tender. Quickly cool them in cold water, then drain thoroughly.
  • In a serving bowl, toss together the sugar snap peas, tomato, salad leaves, and frittata. In a small jug, whisk the balsamic and mustard. Just before serving, drizzle the dressing over the salad.
