Delicious frittata recipe: Use smoked salmon, leftover veggies, or roast potatoes for a flavorful twist on leftovers.
Ingredients:
  • 2 baby cos lettuce, outer leaves discarded, inner leaves torn
  • 12 cherry tomatoes, halved
  • 1/2 telegraph cucumber, halved lengthways, seeds removed, chopped
  • 55g olive
  • 80ml olive oil
  • 40.00 ml red wine vinegar
  • 6 eggs
  • 125ml cream
  • 250g fresh ricotta
  • 270g leg ham, cut into 1cm cubes (to give about 1 1/2 cups)
  • 40.00 ml chopped mint, plus extra mint leaves to garnish
  • 2 spring onions, finely chopped
Instructions:
  • Preheat the oven to 180C and prepare a 20cm x 30cm lamington pan by greasing and lining it. In a large bowl, combine eggs, cream, and ricotta. Add ham, mint, spring onion, sea salt, and black pepper. Pour the mixture into the pan and bake for 20 minutes until golden and set. Let it cool for 10 minutes, then invert onto a plate or board and cool completely.
  • Combine the cos lettuce, cherry tomatoes, cucumber, and olives in a large serving bowl. Whisk together the oil and vinegar, then season with sea salt and freshly ground black pepper to taste.
  • Cut the frittata into 3-4cm triangles and place them in the salad bowl. Pour the dressing over the frittata. Gently mix the salad, garnish with fresh mint leaves, and serve promptly.
