Versatile ham and cheese frittata with onion and potatoes. One-pan dish for a satisfying breakfast or brunch.
Ingredients:
  • 3 tablespoons milk
  • 2 tablespoons butter
  • 2 potatoes, cubed
  • 0.5 cup cubed fully cooked ham
  • 0.25 cup chopped onion
  • 1.5 teaspoons minced garlic
  • 0.25 cup water, or as needed
  • salt and ground black pepper to taste
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler.
  • Whisk eggs and milk together in a bowl; let sit.
  • In a large oven-proof skillet, melt butter over medium heat. Sauté potatoes, ham, onion, and garlic in the melted butter until potatoes are tender, about 15 minutes. If needed, add water to prevent veggies from drying out. Season with salt and pepper to taste.
  • Gently pour the egg mixture over the vegetables. Allow it to cook undisturbed until the bottom of the eggs is slightly browned.
  • Broil in the preheated oven for 5 minutes until eggs are nearly set. Sprinkle Cheddar cheese over eggs and continue broiling for another 5 minutes until frittata is fully set and cheese is melted.
