London broil steak stewed with carrots and potatoes in rich, savory gravy for a hearty, comforting dinner.
Ingredients:
  • 2 tablespoons vegetable oil, or as needed
  • 1 (2.5 pound) London broil, cut into thirds
  • 1 teaspoon Creole seasoning, or to taste
  • 2 cups beef broth
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.5 cup red wine
  • 1 onion, sliced
  • 1 (16 ounce) package baby carrots
  • 3 potatoes, quartered, or more to taste
Instructions:
  • First, delicately arrange sliced onion at the base of a slow cooker, followed by artfully alternating layers of carrots and potatoes.
  • In a large skillet over medium heat, heat oil and generously season London broil with Creole seasoning. Sear the beef in the hot oil until beautifully browned, about 3 to 5 minutes per side. Transfer the meat to the slow cooker.
  • Combine beef broth, cream of mushroom soup, and red wine in the skillet with the cooked beef, bringing it to a simmer. Use a spatula to scrape up the flavorful brown bits from the bottom of the skillet before pouring the mixture over the beef.
  • Slow cook for 8 to 10 hours on Low or 6 hours on High to develop rich flavors and a deliciously tender dish.
