Jools’ Asian-style salmon

Kid-friendly dish with a hint of bold flavors can be made more adult-friendly with mirin or sweet sherry instead of lime juice.
Ingredients:
  • 1 clove of garlic
  • 1 x 3 cm piece of ginger
  • 1 lime
  • 3 tablespoons low-salt soy sauce
  • 1 tablepsoon runny honey
  • 1 teaspoon groundnut oil
  • 2 x 120 g salmon fillets scaled, pin-boned, from sustainable sources
  • 1 tablespoon sesame seeds optional
Instructions:
  • Begin by peeling and crushing garlic in a shallow bowl. Add finely grated ginger and lime zest, then mix in soy sauce, lime juice, honey, and oil. Preheat the grill and line a baking tray with foil. Check salmon fillets for bones, cut into cubes, and coat with marinade. Thread salmon onto skewers and grill for 8-10 minutes, brushing with marinade. Toast sesame seeds in a pan. Serve salmon skewers sprinkled with sesame seeds and lime wedges, alongside greens and rice or noodles. Enjoy!
