Make a versatile batch of sweet and crunchy topping to enhance yoghurt or porridge. Keep it in an airtight container for convenience.
Ingredients:
  • 50 g blanched almonds
  • 50 g pecan nuts
  • 50 g unsalted pistachios (shelled)
  • 50 g dried apricots
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 1 tablespoon sesame seeds
  • 1 tablespoon flaxseeds
  • 250 g porridge oats
  • 1 teaspoon ground cinnamon
  • 1 tablespoon desiccated coconut
  • 50 g sultanas
  • 50 g sour cherries
  • 6 tablespoons maple syrup
  • 1 orange
Instructions:
  • Preheat the oven to 160ºC/325ºF/gas 3. Roughly chop nuts and apricots and place in a large bowl. Mix in the remaining dry ingredients. Drizzle with maple syrup and grate over orange zest, then stir to coat everything. Spread mixture on a large baking tray, or split between two trays. Bake for 20-25 minutes until golden, stirring every 10 minutes. Granola will become crunchy as it cools, so be mindful not to overcook. Once cooled, transfer to airtight jars for up to 4 weeks of freshness.
