Jools’ easy chicken curry

The Oliver family's beloved mild & healthy chicken curry - simple & delicious!
Ingredients:
  • 1 onion
  • 4cm piece of ginger
  • 2 cloves of garlic
  • olive oil
  • 2 tablespoons tikka masala paste
  • 3 tablespoons natural yoghurt
  • 2 tablespoons tomato purée
  • 8 skinless chicken thighs, bone in
  • 1 x 400 g tin of chopped tomatoes
  • 1 x 400 g tin of green lentils
  • 1 x 400 g tin of light coconut milk
  • 2 handfuls of baby spinach optional
  • 2 tablespoons mango chutney
Instructions:
  • Peel and slice the onion. Peel the ginger and garlic, then finely chop or grate them. Heat some oil in a large pan over medium heat, cook the onions until softened and slightly golden, stirring regularly, about 8 minutes. Add ginger and garlic and cook for an additional 2 minutes. In a bowl, mix tikka masala paste, yogurt, and tomato purée, then add chicken thighs. Stir until chicken is covered in the mixture. Transfer everything to the pan and cook chicken until it starts to color, about 5 minutes. Add tinned tomatoes, drained lentils, and coconut milk. Bring to a boil, then simmer for 1 hour, stirring occasionally. Add water if needed. Stir in spinach to wilt, then add mango chutney and adjust seasoning. Shred chicken with forks and mix well. Serve with wholemeal basmati rice and yogurt on the side.
