Top pudding with fresh fruit and jam, using almond or regular milk.
Ingredients:
  • 120 g risotto or pudding rice
  • 800 ml unsweetened almond milk or regular milk, plus an extra splash
  • 4 tablespoons maple syrup or runny honey
  • 1 teaspoon vanilla paste (or you can scrape out the seeds from a vanilla pod, if you have one)
  • 1 handful of blueberries
  • 1 ripe banana
Instructions:
  • Combine rice, milk, 200ml water, half the maple syrup or honey, and vanilla in a large pan. Stir well, then cook over very low heat for about 45 minutes until creamy, stirring occasionally. Add a splash of milk if needed to adjust consistency. Slice the banana and serve the rice pudding with blueberries, banana slices, and the remaining maple syrup or honey drizzled over the top. Bonus tip: For a delightful twist, mix in 2 tablespoons of cocoa powder to create chocolate rice pudding.
