Jools' sweet pea & prawn pasta shells

Whip up a delectable meal in no time using pantry staples - sweet peas, prawns, and tomato sauce come together for a delightful and satisfying dish.
Ingredients:
  • 320 g dried pasta shells
  • 4 cloves of garlic
  • 1 fresh red chilli
  • olive oil
  • 200 g frozen peeled cooked prawns
  • 200 g frozen peas
  • 1 heaped tablespoon tomato purée
  • 30 g Parmesan cheese
Instructions:
  • In a large pot, cook the pasta in boiling salted water as per package instructions. In the meantime, finely slice the garlic and deseed and slice the chili. Place them in a large frying pan with a bit of oil over medium heat until lightly golden. Add prawns, peas, and tomato purée. Pour in some boiling pasta water, then simmer on low until the pasta is done. Drain the pasta, reserving a cup of cooking water. Season the sauce, then combine with pasta. Sprinkle with grated Parmesan, mix well, adding cooking water if needed. Serve immediately in bowls.
