Quick and easy recipe for succulent chicken breasts in a flavorful, rich sauce.
Ingredients:
  • 0.5 cup olive oil, divided
  • 1 pound ripe tomatoes, coarsely chopped
  • 2 cloves garlic, minced
  • 2 2-inch thick chicken breasts
  • 1 pinch garlic salt
  • 1 pinch ground black pepper
  • 2 cups Shiraz red wine
  • 2 tablespoons brown sugar
  • 1 tablespoon butter
  • 1 cup fresh baby spinach
Instructions:
  • Heat oil in two skillets over medium heat for even cooking.
  • Toss the tomatoes and garlic in the large skillet to coat them evenly.
  • Turn up the heat to medium-high. Season the chicken with black pepper and garlic salt, then place it in the hot oil. Cook until browned on each side, about 7 minutes per side.
  • Pour the vibrant red wine into the skillet with the luscious tomato mixture and turn up the flame for an exciting sizzle. Gently crush any whole tomatoes with a spoon. Let the mixture reach a vigorous simmer, reducing the liquid by half, approximately 10 minutes. Stir in the sweet brown sugar and rich butter until fully blended. Lower the heat, cover, and let the flavors meld beautifully.
  • Add the browned chicken to the savory tomato sauce and simmer gently until the chicken is cooked through and no longer pink inside, turning it once. This should take about 15 minutes.
  • Lay out a bed of fresh spinach on a beautiful platter. Next, arrange the cooked chicken pieces gently on the bed of spinach. Finally, generously drizzle the flavorful sauce over the chicken.
