Flavorful poached chicken cooked with veggies, peppercorns, and tomato paste in delicious stock for juicy results.
Ingredients:
  • 1 (32 fluid ounce) container chicken stock
  • 32 fluid ounces water, or more if needed
  • 1 yellow onion, peeled and slits cut into it
  • 1 bunch celery, stalks (including leaves) separated
  • 3 carrots
  • 2 tablespoons tomato paste, or more to taste
  • 1 tablespoon salt
  • 5 whole black peppercorns
  • 1 bay leaf
  • 2 pounds skinless, boneless chicken breast halves, each cut in half
Instructions:
  • In a large pot, simmer chicken stock, water, yellow onion, celery, carrots, tomato paste, salt, peppercorns, and bay leaf until vegetables are tender, about 30-45 minutes. Taste occasionally to adjust seasoning.
  • Bring the flavorful stock to a boil, gently place the chicken in, and adjust with more water if needed to submerge it completely. Let the poaching liquid simmer until the chicken is cooked through, approximately 15 minutes, ensuring it reaches an internal temperature of at least 165°F (74°C) when tested with a thermometer.
