Poach chicken breast for maximum flavor and juiciness, infused with aromatics without drying it out.
Ingredients:
  • 1 boneless, skinless chicken breast (8 ounces)
  • 2 tablespoons lemon juice
  • 1-2 pinches kosher salt
  • 1-2 pinches dried herbs of your choice, such as tarragon, oregano, basil, rosemary, or thyme, or some other seasoning such as cumin or paprika
  • Good-quality plastic wrap (use plastic wrap that says it's microwave safe)
Instructions:
  • Prepare chicken with zesty marinade: Remove fat from chicken breast and slice into uniform strips no wider than 3 inches. Combine lemon juice, salt, and herbs in a bowl. Coat chicken with mixture and let it marinate while you move to the next step of heating water.
  • In a covered 4-quart pot, bring 2 1/2 quarts of water to a vigorous simmer.
  • Wrap the chicken tightly in plastic wrap: Lay a long sheet of plastic wrap, twice the length of the chicken slices. Put a chicken strip in the center of the wrap. Roll up the chicken tightly in the plastic, pressing out excess air. Rotate the rolled chicken to tighten the cylinder. Secure the ends with a double knot. Repeat with the rest of the chicken strips.
  • Gently simmer the rolled-up chicken cylinders in hot water, then cover the pot and let the chicken steep for 15 minutes until cooked through. If needed, you can return the chicken to the poaching liquid for additional cooking time.
  • Unwrap the chicken, slice, and serve. Be sure to unwrap the chicken over a bowl to catch any flavorful juices, which you can pour over the chicken or use to make a delicious sauce.
