Irresistible Juicy Lucy burger with gooey American cheese inside juicy grilled patties.
Ingredients:
  • 6 slices American cheese
  • 2 pounds 80/20 ground chuck
  • 2 teaspoons granulated garlic
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 6 hamburger butter buns
  • 24 dill pickle slices
Instructions:
  • Fold each slice of American Cheese into eight layers to create a tall stack for stuffing the patties later.
  • Shape ground chuck into patties: Divide the ground chuck into 12 equal balls, each about 2.6 ounces. Form each ball into a patty by pressing between your hands. Place the patties on a baking sheet and gently flatten them to approximately 3 1/2 inches in diameter.
  • Cheese-stuffed patties: Indent the center of each patty with two fingers. Fill each dimple with folded cheese slices. Top with another patty, press edges to seal in your palm, and crimp the edges with fingers to secure. Ensure no cheese is exposed before grilling.
  • Chill burgers in the fridge for 30 minutes to set.
  • Get the grill ready by setting it up for 2-zone heat: on a gas grill, keep one burner off or on low and the other on medium-high heat (400°F to 500°F). For a charcoal grill, leave one side without lit coals. This setup allows for easy adjustments during grilling, with the option to move the food to the cooler side if needed. Preheat for 10 to 15 minutes before grilling the burgers over direct heat.
  • Take the patties out of the fridge and generously season each side with granulated garlic, salt, and pepper.
  • Cook the burgers on the grill over direct heat, flipping them once until they reach an internal temperature of 155°F, about 9 to 11 minutes for a medium well burger. Remove from the grill.
  • Toast the burger buns: Place the cut side of the buns on the grill over direct heat until lightly marked, about 30 seconds to 1 minute.
  • Prepare the burgers by placing 4 pickles on each bottom bun, adding the burger, and topping with the top bun. Serve.
