Juicy brined pork chops with a sweet and spicy rub, seared and baked to perfection.
Ingredients:
  • 4 cups cold water
  • 0.25 cup kosher salt
  • 1 tablespoon whole black peppercorns
  • 1 bay leaf
  • 4 (5 ounce) center-cut pork chops on the bone
  • 0.5 cup packed brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dry mustard powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil, or more as needed
  • aluminum foil
Instructions:
  • Prepare the brine by mixing together cold water, salt, peppercorns, and bay leaf. Pour this flavorful brine over the pork chops in a shallow baking dish. Allow the pork chops to marinate for 1 to 2 hours.
  • Prepare the rub by mixing together brown sugar, garlic powder, paprika, onion powder, mustard powder, salt, and pepper in a small bowl.
  • Preheat the oven to 400°F (200°C) for a perfectly cooked dish.
  • Take the pork chops out of the brine, rinse them with cold water, and gently dry them. Massage the seasoning mix onto both sides of the pork chops generously. Dispose of the brine.
  • Preheat a cast iron skillet over medium-high heat. Add oil, followed by pork chops. Sear until golden brown, about 2 to 3 minutes on each side.
  • Flip the pork chops and transfer the skillet to the preheated oven. Bake for 6 to 8 minutes until fully cooked. Take out of the oven, cover loosely with aluminum foil, and allow to rest for 5 minutes before serving.
