Moist and delicious quick bread - simple and satisfying!
Ingredients:
  • 1 (29 ounce) can sliced peaches with juice
  • 6 tablespoons sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 cups sugar
  • 0.5 cup butter flavored shortening
  • 1 cup chopped pecans
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C), then generously grease and flour two 9x5 inch loaf pans.
  • Blend fresh, juicy peaches with peach juice and a touch of sugar until velvety smooth.
  • Sift flour, baking powder, baking soda, salt, and cinnamon in a large bowl. Cream shortening and 1 1/2 cups sugar in another large bowl. Add eggs one at a time, beating well, then mix in vanilla. Alternate blending creamed mixture with peach puree into the flour mix, stirring to combine. Fold in nuts and pour batter into pans.
  • Bake at 325 degrees for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes, then transfer to a rack to cool completely.
