Wholesome frozen oatmeal with peaches, almonds, and choice of fruit. Evaporated milk for added creaminess; regular milk also a delicious option.
Ingredients:
  • cooking spray
  • 4 cups evaporated milk
  • 0.25 teaspoon salt
  • 1 cup rolled oats
  • 1 tablespoon maple syrup
  • 0.5 teaspoon ground cinnamon
  • 0.33333334326744 cup slivered almonds, roasted
  • 0.5 cup chopped peaches
Instructions:
  • Grease a 12-cup muffin tin with a light coat of nonstick cooking spray.
  • In a large pot over medium-high heat, bring evaporated milk and salt to a rolling boil. Add oats, reduce heat to low, and simmer while stirring frequently until oats are tender and liquid is absorbed, about 15 minutes. Remove from heat and mix in maple syrup, cinnamon, almonds, and peaches. Let oatmeal thicken for 5 minutes before serving.
  • Scoop the oatmeal into the muffin cups and freeze until solid, at least 8 hours. Remove the frozen oatmeal disks from the muffin pan and store in a freezer-safe quart-sized bag.
  • Serve by placing 1 or 2 frozen oatmeal disks in a bowl and microwaving on high power for 1 1/2 to 3 minutes, stirring halfway through, until oatmeal is hot.
