Kale, fried chorizo & crusty croutons with a poached egg

Ingredients:
  • 60 g quality chorizo
  • 1 slice of crusty bread
  • 150 g kale
  • 1 clove of garlic
  • 2 large free-range eggs
  • 2 tablespoons sherry vinegar
Instructions:
  • Chop chorizo and sauté in a medium frying pan with 2 tablespoons of oil until crisp. Add torn bread chunks and cook for another minute. Chop kale, garlic, and add to pan. Cook until kale wilts slightly. Poach eggs. Mix vinegar into pan, season, and let simmer briefly. Serve topped with poached egg.
