Refreshing kale salad with apple, currants, pine nuts, and tangy feta tossed in apple cider vinegar.
Ingredients:
  • 1 bunch kale, large stems discarded, leaves finely chopped
  • 0.5 teaspoon salt
  • 1 tablespoon apple cider vinegar
  • 1 apple, diced
  • 0.33333334326744 cup feta cheese
  • 0.25 cup currants
  • 0.25 cup toasted pine nuts
Instructions:
  • Massage kale with a pinch of salt in a large mixing bowl for 2 minutes to soften and enhance flavor.
  • Drizzle kale with vinegar and toss gently to coat. Mix in apple, feta cheese, currants, and pine nuts until well combined.
