Quick and easy warm farro salad with feta and kale - perfect for busy lunches on-the-go!
Ingredients:
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 2 cups chicken broth
  • 1 cup farro
  • 2 cups chopped kale
  • 0.5 cup crumbled reduced-fat feta cheese
Instructions:
  • Combine the bold flavors of olive oil, garlic, zesty lemon juice, salt, and pepper in a bowl for a burst of deliciousness.
  • In a large frying pan or wok, simmer farro in chicken broth until tender and the broth is absorbed, about 20 to 25 minutes.
  • Coat farro with olive oil mixture. Add kale and cook until wilted. Stir in feta cheese until incorporated. Season with salt and pepper to taste.
