Sautéed kale and mushrooms with garlic, onion, and nutmeg - a flavorful and healthy side dish.
Ingredients:
  • 1 teaspoon grapeseed oil
  • 1 onion, diced
  • 0.5 cup sliced shiitake mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon wine vinegar
  • 1 pinch salt and ground black pepper to taste
  • 1 bunch kale leaves, torn (ribs removed and discarded)
  • 0.5 teaspoon freshly grated nutmeg
Instructions:
  • In a heated wok, sauté onion, mushrooms, and garlic in oil until mushrooms are tender, around 5 minutes. Stir in butter, vinegar, salt, and pepper. Toss everything together until butter is melted and mixture is well-coated, approximately 1 minute.
  • Remove the wok from the heat and toss in the kale. Stir fry in the residual heat until vibrant green, approximately 5 minutes. Sprinkle nutmeg over the kale mixture and stir well.
