Wholesome rice stir-fry with kale, veggies, and mushrooms - a delicious and easy side dish!
Ingredients:
  • 1 cup chopped kale
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 stalk celery, diced
  • 0.5 cup sliced fresh mushrooms
  • 0.5 green bell pepper, diced
  • 2 cups cooked white rice
  • 1 teaspoon dry mustard
  • 2 pinches cayenne pepper
Instructions:
  • 1. Prepare a steamer by filling a saucepan with water just below the bottom of the steamer insert, then bring to a boil. 2. Add the kale, cover, and steam for 7 to 10 minutes until tender.
  • In a large skillet over medium heat, sauté onion, celery, mushrooms, green bell pepper, and garlic in olive oil and butter until onion is tender, about 5 minutes. Mix in kale and rice, breaking the rice into grains with your spoon. Season with dry mustard, cayenne pepper, salt, and black pepper. Cook until the rice is hot, about 5 minutes.
