Southern Dirty Rice

Classic Southern dirty rice: Savory broth-infused rice with sautéed livers, gizzards, onion, and garlic.
Ingredients:
  • 0.25 pound chicken gizzards, rinsed
  • 0.5 pound chicken livers, rinsed and trimmed
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups uncooked white rice
  • 4 cups chicken broth
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 1 cup thinly sliced green onions
Instructions:
  • Process gizzards in a food processor, followed by processing livers.
  • In a large saucepan over medium heat, sauté onions and gizzards in hot oil until meat starts to brown, around 5 minutes. Add livers and garlic, continue to cook and stir until browned, approximately 3 minutes.
  • Coat rice in oil by stirring, then add broth, salt, pepper, and cayenne pepper. Bring to a boil, then simmer covered for about 20 minutes until the rice absorbs the liquid. Serve sprinkled with green onion.
