Sautéed rice with onion, bell pepper, tomatoes, and spices, simmered to perfection.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 cup uncooked white rice
  • 1 onion, chopped
  • 0.5 green bell pepper, chopped
  • 2 cups water
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 2 teaspoons chili powder, or to taste
  • 1 teaspoon salt
Instructions:
  • In a deep skillet over medium heat, sizzle the rice, onion, and bell pepper in oil until the rice is golden brown and the onions are soft.
  • Combine water and tomatoes in the pot, then infuse with the flavors of chili powder and salt. Simmer covered for 30 minutes until the rice is tender and has absorbed all the liquid.
