Quick and delicious Spanish rice recipe!
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 cups uncooked long-grain white rice
  • 0.25 onion, chopped
  • 1 green bell pepper, chopped
  • salt and pepper to taste
  • 1 (14.5 ounce) can stewed tomatoes
  • 4 cups water
Instructions:
  • Combine oil, rice, onion, green pepper, salt, and pepper in a large skillet until the rice is lightly browned. Remove from heat.
  • Combine tomatoes with the mixture and add water until it completely covers the ingredients, adding more if needed. Bring the skillet back to the stovetop and bring to a boil, seasoning with salt and pepper. Once boiling, cover and simmer for 12 to 15 minutes. Do not uncover the skillet during this time. Turn off the stove and let it sit, covered, for an additional 12 to 15 minutes. The cover must remain on until the very end!
